Cucumbers are great when on the HCG diet plan due to their high water content and low calories. They are only 16 calories per sliced cup and 96% water. That is including the peel. Unless you are eating organic, I don’t recommend eating the peel. Cucumbers are full of nutrition and high in fiber. Good for any weight loss diet or just eating healthy in general. The cucumber is, possibly, more versatile than you may know.
Big question when on the HCG diet plan is, what about a pickle? I’m sure you were wondering yourself! Well, it is not officially on Dr. Simeons’ diet protocol, but, a pickle is just a cucumber and vinegar is allowed. Many brands do add sugar, so you have to watch for that. It’s up to you if you want to give them a chance.
The cucumber is one of the oldest cultivated crops and believed to have originated in India. It belongs to the gourd family like the squash, zucchini and watermelon.
I love to add slices of cucumber to my lemon water. It gives it an extra bit of flavor and nutrition.
1 cup finely chopped cucumbers
1 cup plain non-fat yogurt
cumin, coriander, salt & pepper to taste
Cucumber “Soba Noodles”
Spiral or shred 1/2 of a seedless cucumber
Boil for 10 minutes
Add other HCG diet plan items for great low-calorie recipes!
Quarter cucumber long ways and scoop out seeds.
*Use as “boats” to hold other HCG diet plan items!
Cut cucumber in 1/2 inch thick slices
Scoop out seeds, leaving a bit in the bottom to create the “bowl”
*Serve other HCG diet plan items in these “bowls”
